Emulsions are essential components in the food, cosmetic, and pharmaceutical industries, with a variety of synthetic compounds commonly used as emulsifiers. However, growing concerns about the environmental and toxicological issues associated with synthetic emulsifiers have shifted focus toward bioemulsifiers as an alternative. Microbial-derived emulsifiers offer low toxicity, biodegradability, and exceptional stability, making them suitable for a wide range of applications. Additionally, they exhibit multifunctional properties such as antioxidant and antimicrobial activity and the ability to modulate microbial community composition.
Our laboratory focuses on developing eco-friendly and functional bioemulsion systems by utilizing biosurfactants derived from beneficial microorganisms. We produce emulsions using these biosurfactants and evaluate their emulsifying properties and encapsulation efficiency. This research aims to create sustainable and effective biological emulsification systems.
